Chef Ryan Gilbert was born and raised in San Diego, California. He graduated from the California Culinary Academy in San Francisco, California in 2005. Ryan spent the next several years honing his craft at the award winning Rancho Valencia Resort & Spa, as sous chef under celebrity chef C. Barclay Dodge of El Bulli in Spain, and Restaurant Mogador in Aspen, Colorado. Ryan then continued his ascension through the culinary world at various San Diego establishments including the prestigious Maderas Golf Club in Poway, California which has been recognized as one of Golf Digest’s “Top 100 Golf Courses in America” and Zagat Guide’s “Top Rated San Diego Golf Course”. Ryan attributes his passion for the culinary arts to his Sicilian and Dutch heritage, and more specifically to his grandfather Simone “Sam” Billuni who was a renowned chef and restaurant owner in San Diego during the 1970’s and 80’s. Ryan currently lives in San Diego’s Rolando Village with his wife Chantel and their dog, a rescued pit bull who is aptly named “Sage”, for Ryan’s favorite winter herb.
Located off of the Conservatory of North Park San Diego's Lafayette Hotel, HOPE 46 Classic American Cuisine serves up unpretentious, classic American cuisine in a relaxed setting. The restaurant's design is all about taking you back in time to an era of smooth jazz and glamor, a sentiment driven home by the soft colors, vintage reclaimed wood, antique glass window panes and unique lighting found throughout.
The relaxed and open setting is the perfect space to gather daily for breakfast, brunch (or both, after all you're on vacation) or a mid-day custom cocktail overlooking the historic Weissmuller Pool.
Loved by locals and guests alike, HOPE 46 honors the heart of American cooking and eating - shared platters of mouthwatering dishes passed across the table between friends and family. After all, isn't that what food is all about?
